Pav Bhaji is a luscious and flavorful street food that is very common in Maharashtra. Made with boiled, mashed, and cooked, thick vegetable gravy, the bhaji when served hot with Pav with a generous amount of butter is a treat to the tummy, especially in winter. Street vendors cook this Bhaji in a giant tava (griddle) with a little butter for the flavor and serve it hot on a plate accompanied by buttered Pav with chopped onions.
